It’s really just banana


The first time I made this soft serve was about two years ago. I read about it online and was curious to find out what all the hype was about. Needless to say, this recipe didn’t disappoint at all. I have made this soft serve countless times and always have some banana pieces lingering in my freezer. It’s a recipe I make without even thinking and maybe that’s why it didn’t show up on TLT before. It definitely deserves a post though!

Every time I serve this ice cream, people ask me what makes it this incredibly creamy. Is it vanilla ice cream I add to it? Is it cream? Full milk? I must admit it’s hard to believe that this soft serve is made with one ingredient only, no additions. It’s really just banana. That’s all.

When you freeze and then process banana pieces, they create the creamiest substance you can imagine. They make a luscious whipped soft serve with a light hint of banana. Healthy and oh so satisfying.

When you’re food processor has trouble with the banana pieces, wait a few minutes before blending and maybe add a splash of milk too. You can also freeze the prepared soft serve to create banana ice cream; equally good.

And of course there are many possible add-ins. A handful of nuts, some cinnamon or vanilla seeds, a swirl of chocolate or caramel, some other frozen fruits like raspberries or mango…the possibilities are endless.
